Ingredients

Scale

For the Chicken:

  • 2 large chicken breasts, halved horizontally (thin cutlets)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

For the Sauce:

  • 2 tbsp butter
  • 3 garlic cloves, minced
  • ½ tsp red pepper flakes (optional)
  • ¾ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes, drained and chopped
  • 1 tsp Italian seasoning
  • Fresh basil leaves (for garnish)

For the Pasta:

  • 8 oz (about ½ pound) fettuccine, penne, or preferred pasta
  • Salt (for pasta water)

Instructions

  1. Prepare the Chicken
    • Season chicken cutlets with garlic powder, onion powder, paprika, salt, and pepper.
    • Heat olive oil in a large skillet over medium heat. Sear chicken for 4–5 minutes per side until golden and fully cooked. Remove and set aside.
  2. Cook the Pasta
    • Boil salted water in a large pot. Cook pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain and set aside.
  3. Make the Sauce
    • In the same skillet, melt butter over medium heat. Sauté garlic and red pepper flakes (if using) until fragrant (about 1 minute).
    • Stir in chicken broth, scraping the bottom of the skillet to deglaze. Simmer for 2–3 minutes.
    • Add heavy cream, Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Stir until smooth and creamy. Simmer for 5 minutes, stirring occasionally.
  4. Combine
    • Return chicken to the skillet, spooning sauce over the top. Simmer for 2–3 minutes.
    • Toss cooked pasta in the sauce until well coated. Add a splash of reserved pasta water to loosen the sauce, if needed.
  5. Serve
    • Garnish with fresh basil and serve immediately. Pair with garlic bread or a side salad for the ultimate meal.

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheating: Warm gently on the stovetop, adding chicken broth or cream to refresh the sauce. Avoid overheating to maintain a creamy texture.
  • Variations:
    • Swap chicken with shrimp, salmon, or mushrooms.
    • Use gluten-free pasta if needed.
    • Enhance with vegetables like spinach, cherry tomatoes, or asparagus.
