Ingredients
Scale
For the Chicken:
- 2 large chicken breasts, halved horizontally (thin cutlets)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
For the Sauce:
- 2 tbsp butter
- 3 garlic cloves, minced
- ½ tsp red pepper flakes (optional)
- ¾ cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, drained and chopped
- 1 tsp Italian seasoning
- Fresh basil leaves (for garnish)
For the Pasta:
- 8 oz (about ½ pound) fettuccine, penne, or preferred pasta
- Salt (for pasta water)
Instructions
- Prepare the Chicken
- Season chicken cutlets with garlic powder, onion powder, paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium heat. Sear chicken for 4–5 minutes per side until golden and fully cooked. Remove and set aside.
- Cook the Pasta
- Boil salted water in a large pot. Cook pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain and set aside.
- Make the Sauce
- In the same skillet, melt butter over medium heat. Sauté garlic and red pepper flakes (if using) until fragrant (about 1 minute).
- Stir in chicken broth, scraping the bottom of the skillet to deglaze. Simmer for 2–3 minutes.
- Add heavy cream, Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Stir until smooth and creamy. Simmer for 5 minutes, stirring occasionally.
- Combine
- Return chicken to the skillet, spooning sauce over the top. Simmer for 2–3 minutes.
- Toss cooked pasta in the sauce until well coated. Add a splash of reserved pasta water to loosen the sauce, if needed.
- Serve
- Garnish with fresh basil and serve immediately. Pair with garlic bread or a side salad for the ultimate meal.
Notes
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
