- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
For the Parmesan Crust:
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded Provolone cheese (or Mozzarella)
- 1/2 cup Panko breadcrumbs
- 2 tablespoons melted butter
- 2 tablespoons ranch dressing
- 1/2 teaspoon garlic powder
For the Creamy Ranch Spread:
- 1/4 cup ranch dressing
- 1/4 cup mayonnaise
Instructions
- Prepare the Chicken:
- Preheat grill or stovetop grill pan to medium-high heat.
- Pat chicken breasts dry with a paper towel.
- Mix salt, black pepper, garlic powder, onion powder, and paprika in a small bowl.
- Rub seasoning mixture over both sides of the chicken, drizzle with olive oil, and coat evenly.
- Grill the Chicken:
- Place chicken on the grill and cook for 5-6 minutes per side until the internal temperature reaches 165°F (75°C).
- Remove from grill and transfer to a baking sheet.
- Make the Parmesan Crust:
- In a small bowl, mix Parmesan, Provolone, Panko breadcrumbs, melted butter, ranch dressing, and garlic powder.
- In another bowl, mix ranch dressing and mayonnaise for the creamy spread.
- Assemble and Broil:
- Preheat oven broiler.
- Spread creamy ranch mixture over each grilled chicken breast.
- Sprinkle Parmesan crust mixture evenly on top.
- Broil for 2-3 minutes until golden brown and bubbly.
- Serve and Enjoy:
- Remove from oven and let rest for a minute.
- Serve with mashed potatoes, roasted veggies, or a side salad.
