  • 1 large head of cauliflower, cut into florets
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • ½ cup sour cream
  • ½ cup cream cheese, softened
  • ¼ cup heavy cream
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 slices bacon, cooked and crumbled

 

  • 2 tablespoons chopped green onions (for garnish)

Instructions

  • Preheat & Prepare Cauliflower:

    • Preheat oven to 375°F (190°C).
    • Bring a large pot of water to a boil and cook the cauliflower for 5-7 minutes until tender. Drain well and pat dry.
  • Make the Creamy Cheese Mixture:

    • In a large bowl, mix sour cream, cream cheese, heavy cream, garlic powder, onion powder, salt, and pepper.
    • Stir in the shredded cheddar cheese until well combined.
  • Assemble the Casserole:

    • Toss the drained cauliflower with the cheese mixture.
    • Transfer to a greased 8×8-inch baking dish and spread evenly.
  • Add Toppings & Bake:

    • Sprinkle with extra cheddar cheese and crumbled bacon.
    • Bake uncovered for 20-25 minutes until bubbly.
