  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 8 oz mushrooms (cremini or button), sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, for garnish

Instructions

Step 1: Prepare and Cook the Chicken

  1. Pat the chicken thighs dry with a paper towel and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken thighs skin-side down and sear for 6-8 minutes until golden and crispy.
  4. Flip the chicken and cook for another 6-8 minutes.
  5. Remove the chicken from the skillet and set aside (it will finish cooking later).

Step 2: Make the Creamy Mushroom Sauce

  1. In the same skillet, add butter and sliced mushrooms. Cook for 3-4 minutes until softened.
  2. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Pour in the chicken broth and deglaze the pan, scraping up any browned bits.
  4. Stir in the heavy cream, Parmesan cheese, Dijon mustard, thyme, and red pepper flakes.
  5. Let the sauce simmer for 3-5 minutes until slightly thickened.

Step 3: Combine and Serve

  1. Return the chicken thighs to the skillet, spooning some sauce over the top.
  2. Reduce the heat to low and simmer for 5-7 minutes until the chicken is cooked through (internal temperature should reach 165°F).
  3. Garnish with fresh parsley and serve hot.
