  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 cup fresh spinach, chopped
  • 1 can (15 oz) cannellini beans, drained and rinsed (optional)
  • 1 tbsp tomato paste
  • 1 tbsp balsamic vinegar

 

  • Fresh parsley or Parmesan cheese for garnish

Instructions

Step 1: Sauté the Aromatics

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté for 2-3 minutes until translucent.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.

Step 2: Brown the Turkey

  1. Add ground turkey and cook, breaking it up with a spoon, until browned (about 5 minutes).
  2. Drain any excess fat if necessary.

Step 3: Add Vegetables and Seasonings

  1. Stir in carrots, celery, zucchini, and bell pepper.
  2. Cook for 3-4 minutes until slightly softened.
  3. Add tomato paste, oregano, basil, thyme, salt, black pepper, and red pepper flakes. Mix well.

Step 4: Simmer the Soup

  1. Pour in diced tomatoes and chicken broth.
  2. Bring to a gentle boil, then reduce heat and simmer for 10-15 minutes until vegetables are tender.

Step 5: Add the Finishing Touches

  1. Stir in spinach, cannellini beans (if using), and balsamic vinegar.
  2. Cook for 2-3 minutes until spinach is wilted.
