Ingredients

Scale
  • 2 boneless, skinless chicken breasts

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon Italian seasoning

  • ½ teaspoon red pepper flakes (optional)

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • ½ cup sun-dried tomatoes, chopped

  • 1 cup chicken broth

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • 8 ounces pasta (penne, fettuccine, or rigatoni)

  • 1 tablespoon fresh basil, chopped (for garnish)

Instructions

  • Prepare the Chicken: Slice chicken breasts in half lengthwise. Season with salt, pepper, Italian seasoning, and red pepper flakes.

  • Cook the Chicken: Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden brown. Remove and set aside.

  • Make the Sauce: In the same skillet, sauté garlic and sun-dried tomatoes for 1-2 minutes. Add chicken broth, scraping the pan. Simmer for 2-3 minutes. Stir in heavy cream and Parmesan until smooth.

  • Cook the Pasta: While making the sauce, cook pasta according to package instructions. Drain and set aside.

  • Combine Everything: Slice cooked chicken into strips. Toss chicken and pasta with the sauce until well coated.

  • Serve: Garnish with fresh basil and extra Parmesan. Serve warm.

  • Add Spinach: Stir in fresh spinach at the end.

  • Spicier Version: Increase red pepper flakes or add cayenne.
