Ingredients

Scale

For the Chicken:

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 1 large egg, beaten
  • 2 tablespoons milk
  • ¼ cup neutral oil (vegetable or avocado oil)

For the Hot Honey Sauce:

  • ½ cup honey
  • 1 ½ teaspoons red pepper flakes (adjust for spice level)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon soy sauce
  • ½ teaspoon garlic powder

For the Bowls:

  • 2 cups cooked white rice, brown rice, or quinoa
  • 1 cup shredded cabbage or coleslaw mix
  • ½ cup sliced cucumbers
  • ½ cup sliced avocado
  • ¼ cup chopped green onions
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Prepare the Chicken
    • Mix flour, cornstarch, salt, black pepper, and smoked paprika in a bowl.
    • In a separate bowl, whisk the egg with milk.
    • Dip each piece of chicken into the egg mixture, then dredge in the flour mixture to coat evenly.
  2. Cook the Chicken
    • Heat oil in a large skillet over medium-high heat.
    • Cook chicken in batches, ensuring not to overcrowd the pan. Fry for 3-4 minutes per side until golden brown and cooked through.
    • Transfer to a paper towel-lined plate to drain excess oil.
  3. Make the Hot Honey Sauce
    • In a small saucepan, combine honey, red pepper flakes, apple cider vinegar, soy sauce, and garlic powder.
    • Heat over low until warm and well combined, about 2 minutes.
    • Pour the hot honey over the cooked chicken and toss to coat evenly.
  4. Assemble the Bowls
    • Divide rice or quinoa into serving bowls.
    • Top with hot honey chicken, shredded cabbage, cucumbers, avocado slices, and green onions.
    • Sprinkle with sesame seeds and drizzle extra hot honey if desired.

Notes

  • Protein Swap: Use shrimp, tofu, or crispy cauliflower instead of chicken.
  • Spice Level: Adjust the red pepper flakes to control heat intensity.
  • Low-Carb Option: Serve over cauliflower rice or mixed greens.
  • Crunch Factor: Add toasted nuts, crispy wontons, or fried onions.
