For the Salmon:
- 4 salmon fillets (6 ounces each)
- Salt and black pepper, to taste
- 1 tablespoon olive oil
For the Brussels Sprouts:
- 1 pound Brussels sprouts, trimmed and halved
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Honey Garlic Sauce:
- 1/4 cup honey
- 3 tablespoons soy sauce (low sodium preferred)
- 3 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon unsalted butter
Instructions
- Prepare the Brussels Sprouts
- Preheat oven to 400°F (200°C).
- Toss Brussels sprouts with olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 15 minutes until caramelized.
- Sear the Salmon
- While Brussels sprouts roast, season salmon with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear salmon skin-side down for 3-4 minutes until crispy.
- Flip and cook another 2 minutes, then remove from heat.
- Make the Honey Garlic Sauce
- In a small saucepan, combine honey, soy sauce, garlic, Dijon mustard, and red pepper flakes.
- Simmer for 2-3 minutes until slightly thickened.
- Stir in butter until melted and remove from heat.
- Combine and Bake
- Remove Brussels sprouts from oven and push to one side of the baking sheet.
- Place salmon fillets on the other side.
- Brush salmon with honey garlic sauce.
- Return to oven and bake for 8-10 minutes, or until salmon is cooked through.
- Serve and Enjoy
- Drizzle extra sauce over salmon and Brussels sprouts.
- Serve with rice, quinoa, or mashed potatoes.
