For the Brussels Sprouts:

  • 1 pound Brussels sprouts, trimmed and halved
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Honey Garlic Sauce:

  • 1/4 cup honey
  • 3 tablespoons soy sauce (low sodium preferred)
  • 3 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon unsalted butter

Instructions

  1. Prepare the Brussels Sprouts
    • Preheat oven to 400°F (200°C).
    • Toss Brussels sprouts with olive oil, salt, and pepper.
    • Spread on a baking sheet and roast for 15 minutes until caramelized.
  2. Sear the Salmon
    • While Brussels sprouts roast, season salmon with salt and pepper.
    • Heat olive oil in an oven-safe skillet over medium-high heat.
    • Sear salmon skin-side down for 3-4 minutes until crispy.
    • Flip and cook another 2 minutes, then remove from heat.
  3. Make the Honey Garlic Sauce
    • In a small saucepan, combine honey, soy sauce, garlic, Dijon mustard, and red pepper flakes.
    • Simmer for 2-3 minutes until slightly thickened.
    • Stir in butter until melted and remove from heat.
  4. Combine and Bake
    • Remove Brussels sprouts from oven and push to one side of the baking sheet.
    • Place salmon fillets on the other side.
    • Brush salmon with honey garlic sauce.
    • Return to oven and bake for 8-10 minutes, or until salmon is cooked through.
  5. Serve and Enjoy
    • Drizzle extra sauce over salmon and Brussels sprouts.
    • Serve with rice, quinoa, or mashed potatoes.
