For the marinade and skewers:

1 ½ pounds boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes

⅓ cup honey

¼ cup low sodium soy sauce

2 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon apple cider vinegar or rice vinegar

½ teaspoon ground black pepper

¼ teaspoon red pepper flakes (optional)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Optional garnish:

Chopped green onions

Toasted sesame seeds


Instructions

Step 1: Make the Marinade
In a medium bowl, whisk together the honey, soy sauce, olive oil, garlic, vinegar, black pepper, and red pepper flakes (if using).

Step 2: Marinate the Chicken
Add chicken cubes to the marinade. Toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably 2–4 hours or overnight.

Step 3: Prepare the Skewers
Thread marinated chicken onto skewers, leaving space between pieces. Discard excess marinade.

Step 4: Preheat the Grill
Heat a grill or grill pan over medium-high heat. Lightly oil the grates.

Step 5: Grill the Skewers
Grill for 10–12 minutes, turning every 2–3 minutes, until chicken is cooked through and lightly charred. Internal temp should reach 165°F (75°C).

 

Step 6: Serve
Transfer to a plate, garnish with green onions and sesame seeds if desired. Serve hot.
