- 2 lbs baby potatoes, halved
- 6 slices bacon, chopped
- 3 tbsp honey
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Potatoes
- Wash and halve the baby potatoes (or cut larger potatoes into bite-sized pieces).
- Season the Potatoes
- In a large bowl, toss potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper. Ensure even coating.
- Add the Bacon
- Spread seasoned potatoes on the prepared baking sheet in an even layer. Sprinkle chopped bacon evenly over them.
- Roast the Potatoes
- Roast for 35-40 minutes, flipping halfway through, until potatoes are golden brown and crispy and bacon is fully cooked.
- Drizzle with Honey
- Remove from the oven and immediately drizzle with honey. Toss gently to coat.
- Garnish and Serve
- Sprinkle with fresh parsley and serve warm.
