Ingredients

Scale
  • 1 lb ground pork (or beef, chicken, or turkey for variations)
  • 2 tbsp apple cider vinegar
  • 1 tbsp smoked paprika
  • 1 tbsp ancho chili powder
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper

  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1/4 tsp ground cinnamon (optional)
  • 1/4 tsp ground cloves (optional)

  1. Prepare the Meat: In a large mixing bowl, combine ground pork with apple cider vinegar, mixing well.
  2. Add the Spices: Sprinkle all the seasonings over the meat and mix thoroughly until fully combined.
  3. Rest the Mixture: Cover and refrigerate for at least 1 hour, preferably overnight, for better flavor development.
  4. Cook the Chorizo: Heat a skillet over medium-high heat and cook, breaking it into crumbles, until fully cooked (8-10 minutes).
  5. Use as Desired: Incorporate into tacos, burritos, eggs, or any dish of choice.

Notes
