- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground coriander
- 1/2 tsp cayenne pepper (adjust to taste)
- 1/4 tsp ground cinnamon (optional)
- 1/4 tsp ground cloves (optional)
Instructions
- Prepare the Meat: In a large mixing bowl, combine ground pork with apple cider vinegar, mixing well.
- Add the Spices: Sprinkle all the seasonings over the meat and mix thoroughly until fully combined.
- Rest the Mixture: Cover and refrigerate for at least 1 hour, preferably overnight, for better flavor development.
- Cook the Chorizo: Heat a skillet over medium-high heat and cook, breaking it into crumbles, until fully cooked (8-10 minutes).
- Use as Desired: Incorporate into tacos, burritos, eggs, or any dish of choice.
Notes
- Variations: Add red wine and Spanish smoked paprika for Spanish-style chorizo. Use ground turkey or chicken for a leaner version. Stuff into casings for sausage links.
- Storage: Store cooked chorizo in an airtight container for up to 4 days. Freeze raw or cooked chorizo for up to 3 months.
