- 1 cup warm milk (110°F)
- 2 1/4 tsp (1 packet) active dry yeast
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 3 1/2 cups all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 1 tsp salt
- 1–2 tsp red gel food coloring
For the Cinnamon Filling:
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 tbsp ground cinnamon
For the Cream Cheese Glaze:
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
- 2–3 tbsp milk
Instructions
- Prepare the Dough
- Combine warm milk and yeast; let sit 5–10 minutes until foamy.
- Stir in sugar, melted butter, eggs, vanilla, and food coloring.
- In another bowl, whisk flour, cocoa powder, and salt. Gradually mix into the wet ingredients.
- Knead dough for 8–10 minutes by hand or 5–7 minutes with a mixer until smooth.
- Place in a greased bowl, cover, and let rise for 1–1.5 hours until doubled.
- Make the Filling
- Mix softened butter, brown sugar, and cinnamon into a paste.
- Assemble the Rolls
- Roll out dough into a 12×18-inch rectangle. Spread filling evenly, leaving a 1/2-inch border.
- Roll tightly into a log and slice into 12 equal rolls. Place in a greased 9×13-inch pan.
- Cover and let rise for 30–45 minutes until puffy.
- Bake
- Preheat oven to 350°F.
- Bake rolls for 25–30 minutes until golden brown.
- Prepare the Glaze
- Beat cream cheese and butter until creamy. Gradually mix in powdered sugar, vanilla, and milk until smooth.
- Finish the Rolls
- Cool rolls for 5–10 minutes. Spread glaze generously over the top before serving.

- Storage: Store in an airtight container at room temperature for 2 days or in the fridge for 5 days.
- Reheating: Warm in the microwave for 15–20 seconds or in a 300°F oven for 5–7 minutes.
