Instructions

  1. Prepare the Cake Batter:
    • Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
    • In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
    • In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
    • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
    • Mix in mashed bananas and sour cream until fully incorporated.
    • Gradually add dry ingredients, mixing until just combined. Fold in chopped walnuts.
  2. Bake the Cake:
    • Divide the batter evenly between the prepared cake pans.
    • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
    • Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  3. Prepare the Cream Filling:
    • In a chilled mixing bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
    • If using cream cheese, beat separately until smooth, then fold into the whipped cream mixture.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread half of the cream filling evenly on top.
    • Place the second cake layer over the filling and spread the remaining cream over the top.
    • Sprinkle toasted walnuts over the top, and drizzle with honey or caramel if desired.
  5. Chill and Serve:
    • Refrigerate for at least 30 minutes before slicing to allow flavors to meld.
