- 1 cup sourdough discard (unfed starter)
- 1 ½ cups whole wheat flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 2 medium apples, diced (about 1 ½ cups)
- ¼ cup honey or maple syrup
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
- 2 eggs (or flax eggs for a vegan option)
Instructions
- Whisk together whole wheat flour, baking soda, salt, and cinnamon in a large bowl.
- In another bowl, mix sourdough discard, honey/maple syrup, coconut oil, vanilla, and eggs until smooth. Fold in diced apples.
- Grease a 9×5-inch loaf pan with coconut oil or line with parchment paper.
- Pour batter into the pan and bake at 350°F (175°C) for 45-50 minutes, or until a toothpick comes out clean. Cool before slicing.
Notes
- For extra crunch, add chopped walnuts or pecans.
- Adjust sweetness by increasing honey/maple syrup if desired.
- Use flax eggs (1 tbsp ground flaxseed + 3 tbsp water per egg) for a vegan version.
