A fusion dessert combining the rich flavors of Indian Gulab Jamun with the crispy texture of Middle Eastern Kunafa nests. This elegant and indulgent treat is perfect for celebrations like Diwali, Eid, and weddings.

For Gulab Jamun:
- 1 cup milk powder
- ¼ cup all-purpose flour
- ¼ tsp baking soda
- 2 tbsp ghee (clarified butter)
- ¼ cup milk (warm)
- 1 tsp lemon juice
- Oil or ghee for frying
For Sugar Syrup:
- 1 cup sugar
- ¾ cup water
- 3–4 cardamom pods, crushed
- 1 tsp rose water
- 1 tsp lemon juice
For Kunafa Nests:
- 200g Kunafa dough (shredded phyllo)
- ½ cup melted butter
- ¼ cup condensed milk
For Garnishing:
- Chopped pistachios
- Silver leaf (optional)
- Dried rose petals (optional)
Instructions
Step 1: Prepare the Sugar Syrup
- In a saucepan, combine sugar, water, and crushed cardamom pods.
- Bring to a boil and let simmer for 8-10 minutes until slightly thickened.
- Add rose water and lemon juice, then remove from heat. Set aside.
Step 2: Make the Gulab Jamun
- In a mixing bowl, combine milk powder, all-purpose flour, and baking soda.
- Add ghee and mix until crumbly.
- Slowly add warm milk and lemon juice, kneading gently until a soft dough forms. Let it rest for 10 minutes.
- Divide the dough into small balls, ensuring they are smooth and crack-free.
- Heat oil or ghee in a pan over low-medium heat and fry the balls until golden brown.
- Immediately transfer the fried Gulab Jamun into warm sugar syrup and soak for at least 30 minutes.
Step 3: Prepare the Kunafa Nests
- Preheat the oven to 180°C (350°F).
- In a bowl, mix shredded Kunafa dough with melted butter.
- Grease a muffin tin and shape small portions of the dough into nests.
- Bake for 12-15 minutes or until golden and crisp.
- Once done, drizzle with condensed milk while still warm.
Step 4: Assemble the Dessert
- Place a Kunafa nest on a serving plate.
- Gently place a syrup-soaked Gulab Jamun in the center of the nest.
- Garnish with chopped pistachios, silver leaf, and dried rose petals.
Notes
- Chocolate Drizzle: Drizzle melted chocolate over the nests for a modern twist.
- Stuffed Gulab Jamun: Fill the Gulab Jamun with chopped nuts for extra richness.
- Flavored Kunafa: Add a pinch of saffron or orange zest to the Kunafa for a fragrant touch.
- Rabri Topping: Serve with a spoonful of creamy rabri for added indulgence.
