Ingredients

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg (optional)
  • 2 eggs
  • ½ cup honey or maple syrup
  • ⅓ cup unsweetened applesauce or Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini (excess moisture squeezed out)

 

  • ½ cup chopped nuts or dark chocolate chips (optional)

Instructions

  • Preheat and Prepare

    • Preheat oven to 350°F (175°C).
    • Grease a 9×5-inch loaf pan or line it with parchment paper.
  • Mix Dry Ingredients

    • In a large bowl, whisk together whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Prepare Wet Ingredients

    • In another bowl, beat the eggs.
    • Add honey (or maple syrup), applesauce (or Greek yogurt), and vanilla extract. Mix well.
  • Combine

    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
    • Fold in grated zucchini and optional mix-ins.
  • Bake

    • Pour batter into the prepared loaf pan.
    • Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.

 

  • Cool and Serve

    • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack.
