Description

For the Bowl Base:

  • 2 cups cooked white or brown rice (or quinoa)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and sliced
  • ½ cup crumbled feta cheese

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • ½ cucumber, grated and squeezed to remove excess water
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp dried dill (or 1 tbsp fresh dill)
  • Salt and pepper, to taste

Optional Toppings:

  • Fresh parsley or dill for garnish
  • Hummus for extra creaminess
  • Warm pita bread on the side

Instructions

  • Marinate the Chicken:
    • In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, paprika, and cumin.
    • Add the chicken, coat evenly, cover, and marinate for at least 30 minutes (or up to 24 hours).
  • Cook the Chicken:
    • Heat a skillet or grill pan over medium-high heat.
    • Cook the chicken for 5-7 minutes per side until fully cooked (165°F internal temperature).
    • Let it rest for 5 minutes before slicing.
  • Prepare the Tzatziki Sauce:
    • In a bowl, mix Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, and dill.
    • Season with salt and pepper. Refrigerate until ready to serve.
  • Assemble the Bowls:
    • Divide cooked rice or quinoa into serving bowls.
    • Top with sliced chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  • Add Toppings & Serve:
    • Drizzle with tzatziki sauce and garnish with parsley or dill.
    • Serve with hummus and pita bread if desired.
