  • 600g scotch fillet steak or boneless rib-eye
  • 2 tablespoons vegetable oil, divided
  • 1 large onion (or 2 small onions), sliced
  • 300g mushrooms, sliced (not too thin)
  • 40g butter
  • 2 tablespoons plain flour
  • 500ml beef broth, preferably reduced-salt
  • 1 tablespoon Dijon mustard
  • 150ml sour cream
  • Salt and pepper, to taste

For Serving:

  • 250300g pasta or egg noodles of choice
  • Chopped chives, for garnish (optional)

Instructions

  1. Prepare the Steak: Flatten steak to 0.75cm thickness with a mallet or rolling pin. Slice into thin strips (0.5cm wide), trimming excess fat. Season with salt and pepper.
  2. Cook the Beef: Heat 1 tablespoon oil in a large skillet over high heat. Add half the beef in a single layer, sear for 30 seconds on each side until browned but pink inside. Remove to a plate. Repeat with the remaining beef using the second tablespoon of oil.
  3. Cook the Vegetables: Reduce heat to medium-high. Melt butter, then add onions and cook for 1 minute. Add mushrooms and cook until golden, scraping up browned bits for flavor.
  4. Make the Sauce: Sprinkle flour over vegetables, stirring for 1 minute. Gradually stir in half the beef broth until smooth. Add the remaining broth, Dijon mustard, and sour cream. Bring to a simmer and cook until the sauce thickens, about 3–5 minutes. Season with salt and pepper.
  5. Combine and Serve: Return beef (with its juices) to the skillet. Simmer for 1 minute, then remove from heat. Serve over pasta or egg noodles, garnished with chopped chives if desired.

Notes

  • Storage: Refrigerate in an airtight container for up to 3 days. Freeze for up to 2 months.
  • Reheating: Warm gently in a pan over low heat, adding broth or water if needed.
