- 600g scotch fillet steak or boneless rib-eye
- 2 tablespoons vegetable oil, divided
- 1 large onion (or 2 small), sliced
- 300g mushrooms, sliced
- 40g butter
- 2 tablespoons plain flour
- 500ml beef broth (reduced-salt preferred)
- 1 tablespoon Dijon mustard
- 150ml sour cream
- Salt and pepper, to taste
For Serving:
- 250–300g pasta or egg noodles
- Chopped chives (optional)
Instructions
- Prepare the Steak: Flatten steak to 0.75cm thickness and slice into thin strips. Season with salt and pepper.
- Cook the Beef: Heat 1 tablespoon of oil in a large skillet over high heat. Sear half the beef for 30 seconds per side, then remove. Repeat with remaining beef and oil.
- Cook the Vegetables: Lower heat to medium-high, melt butter, and cook onions for 1 minute. Add mushrooms and cook until golden.
- Make the Sauce: Sprinkle flour over vegetables, stir for 1 minute, then gradually add half the broth, mixing until smooth. Stir in remaining broth, mustard, and sour cream. Simmer for 3–5 minutes until thickened. Season to taste.
- Combine and Serve: Return beef to skillet, simmer for 1 minute, then serve over pasta or egg noodles, garnished with chives.

- Use cremini or portobello mushrooms for deeper flavor.
- Swap Dijon mustard with whole-grain mustard for a milder taste.
