  • 40g butter
  • 2 tablespoons plain flour
  • 500ml beef broth (reduced-salt preferred)
  • 1 tablespoon Dijon mustard
  • 150ml sour cream
  • Salt and pepper, to taste

For Serving:

  • 250300g pasta or egg noodles
  • Chopped chives (optional)

Instructions

  1. Prepare the Steak: Flatten steak to 0.75cm thickness and slice into thin strips. Season with salt and pepper.
  2. Cook the Beef: Heat 1 tablespoon of oil in a large skillet over high heat. Sear half the beef for 30 seconds per side, then remove. Repeat with remaining beef and oil.
  3. Cook the Vegetables: Lower heat to medium-high, melt butter, and cook onions for 1 minute. Add mushrooms and cook until golden.
  4. Make the Sauce: Sprinkle flour over vegetables, stir for 1 minute, then gradually add half the broth, mixing until smooth. Stir in remaining broth, mustard, and sour cream. Simmer for 3–5 minutes until thickened. Season to taste.
  5. Combine and Serve: Return beef to skillet, simmer for 1 minute, then serve over pasta or egg noodles, garnished with chives.
