- 1 3/4 cups water or broth
- 1 large onion, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil

- 1/4 teaspoon garlic powder (optional)
- 1/2 teaspoon sugar (optional, to aid caramelization)
- 1 tablespoon fresh parsley or chives (optional, for garnish)
Instructions
Step 1: Prepare the Rice
- Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
- Drain and set aside.
Step 2: Caramelize the Onions
- Heat a large skillet over medium-low heat, add olive oil and 1 tablespoon butter.
- Add sliced onions, stirring to coat. Cook for 15-20 minutes, stirring occasionally, until golden brown. If onions start sticking, add a splash of water to deglaze.
- If using, sprinkle sugar to speed up caramelization.
- Remove half of the onions for garnishing later.
Step 3: Cook the Rice
- In a medium saucepan, combine rinsed rice, water or broth, salt, black pepper, and garlic powder.
- Stir in the remaining caramelized onions.
- Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat and let sit covered for 5 minutes.
Step 4: Finish with Butter and Serve
- Fluff the rice with a fork and mix in the remaining tablespoon of butter.
- Transfer to a serving dish, garnish with reserved caramelized onions and fresh herbs.
- Serve warm and enjoy!
