Description

  • 1 3/4 cups water or broth
  • 1 large onion, thinly sliced

  • 1 tablespoon olive oil

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/2 teaspoon sugar (optional, to aid caramelization)
  • 1 tablespoon fresh parsley or chives (optional, for garnish)

Instructions

Step 1: Prepare the Rice

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. Drain and set aside.

Step 2: Caramelize the Onions

  1. Heat a large skillet over medium-low heat, add olive oil and 1 tablespoon butter.
  2. Add sliced onions, stirring to coat. Cook for 15-20 minutes, stirring occasionally, until golden brown. If onions start sticking, add a splash of water to deglaze.
  3. If using, sprinkle sugar to speed up caramelization.
  4. Remove half of the onions for garnishing later.

Step 3: Cook the Rice

  1. In a medium saucepan, combine rinsed rice, water or broth, salt, black pepper, and garlic powder.
  2. Stir in the remaining caramelized onions.
  3. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
  4. Remove from heat and let sit covered for 5 minutes.

Step 4: Finish with Butter and Serve

  1. Fluff the rice with a fork and mix in the remaining tablespoon of butter.
  2. Transfer to a serving dish, garnish with reserved caramelized onions and fresh herbs.
  3. Serve warm and enjoy!
