Ingredients
- 1 cup all-purpose flour
- 1 tablespoon brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- 3/4 cup milk
- 1 egg
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon vanilla extract
- Optional: 1-2 teaspoons molasses (for an authentic gingerbread flavor)
- Optional toppings: Whipped cream, maple syrup, or fruit
Instructions
-
Prepare the Dry Ingredients:
In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Set aside. -
Mix the Wet Ingredients:
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract. For a deeper gingerbread flavor, you can add molasses. -
Combine Wet and Dry Ingredients:
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing to keep the pancakes fluffy. The batter should be slightly lumpy. -
Heat the Pan:
Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter. -
Shape the Pancakes:
Spoon the batter onto the skillet, shaping it into gingerbread men using a spoon or spatula, or use a gingerbread man mold. For regular pancakes, spoon the batter into round shapes. -
Cook the Pancakes:
Cook for about 2-3 minutes on the first side or until bubbles form. Flip the pancakes and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter. -
Serve:
Arrange the gingerbread men pancakes on a plate and top with your choice of whipped cream, syrup, or fruit. Enjoy!
Notes
- Vegan Option: Replace the egg with a flaxseed egg and use non-dairy milk and plant-based butter.
- Chocolate Chip Gingerbread Pancakes: Add mini chocolate chips to the batter for a sweet twist.
- Gingerbread Pancake Stack: Skip the gingerbread man shape and stack the pancakes in traditional layers. Drizzle with molasses or caramel sauce.
- Add-ins: Raisins, dried cranberries, or chopped nuts can be added to the batter for extra flavor and texture.
