  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese

Optional Garnish:

  • Fresh parsley, chopped
  • Extra Parmesan for sprinkling

Instructions

  1. Preheat the Oven
    • Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or line with parchment paper.
  2. Prepare the Potatoes
    • In a large bowl, toss halved baby potatoes with olive oil, melted butter, garlic, salt, pepper, paprika, thyme, and Parmesan cheese.
    • Spread them in a single layer on the baking sheet, leaving space for the chicken.
  3. Season the Chicken
    • Pat the chicken dry with paper towels.
    • In a separate bowl, mix olive oil, melted butter, garlic, salt, pepper, paprika, onion powder, oregano, and Parmesan cheese.
    • Coat the chicken evenly with this mixture.
  4. Assemble and Bake
    • Place the seasoned chicken on the baking sheet next to the potatoes.
    • Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
  5. Broil for Crispiness (Optional)
    • For extra crispiness, broil on high for 2-3 minutes, watching closely to prevent burning.
