For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)

- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
For the Potatoes:
- 1 1/2 pounds baby potatoes, halved
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
Optional Garnish:
- Fresh parsley, chopped
- Extra Parmesan for sprinkling
Instructions
- Preheat the Oven
- Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or line with parchment paper.
- Prepare the Potatoes
- In a large bowl, toss halved baby potatoes with olive oil, melted butter, garlic, salt, pepper, paprika, thyme, and Parmesan cheese.
- Spread them in a single layer on the baking sheet, leaving space for the chicken.
- Season the Chicken
- Pat the chicken dry with paper towels.
- In a separate bowl, mix olive oil, melted butter, garlic, salt, pepper, paprika, onion powder, oregano, and Parmesan cheese.
- Coat the chicken evenly with this mixture.
- Assemble and Bake
- Place the seasoned chicken on the baking sheet next to the potatoes.
- Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
- Broil for Crispiness (Optional)
- For extra crispiness, broil on high for 2-3 minutes, watching closely to prevent burning.
- Garnish and Serve
- Remove from the oven and sprinkle with fresh parsley and additional Parmesan if desired.
