Instructions
- Preheat the Oven: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or grease lightly.
- Prepare the Chicken: Pat chicken thighs dry. Season evenly with salt, pepper, garlic powder, and smoked paprika.
- Season the Potatoes: Toss halved potatoes with olive oil, salt, pepper, and oregano in a mixing bowl. Spread on one side of the baking sheet.
- Arrange the Chicken: Place seasoned chicken skin-side up on the other side of the sheet, avoiding overlap.
- Make Garlic Parmesan Mixture: Mix minced garlic, melted butter, and Parmesan in a small bowl. Spoon generously over the chicken and drizzle over potatoes.
- Bake: Bake for 35–40 minutes, or until chicken reaches 165°F (74°C) and potatoes are fork-tender.
- Broil for Crispiness: Broil for 2–3 minutes to achieve a golden crust. Watch closely to prevent burning.
- Garnish and Serve: Sprinkle parsley over chicken and potatoes before serving, if desired.
