Garlic Parmesan Chicken and Potatoes (One-Pan Dinner)

  • Total Time: 55 minutes
  • Yield: 4 servings 1x

Description

A simple, flavorful, and hearty one-pan dinner featuring crispy chicken thighs, tender potatoes, and a garlicky parmesan coating. Perfect for busy weeknights or casual gatherings with minimal cleanup.

Ingredients

Scale

For the Chicken:

  • 4 bone-in, skin-on chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika

For the Potatoes:

  • 1.5 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano or Italian seasoning

For the Garlic Parmesan Mixture:

  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp unsalted butter, melted
  • 1 tbsp chopped parsley (optional, for garnish)

Instructions

  1. Preheat the Oven: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or grease lightly.
  2. Prepare the Chicken: Pat chicken thighs dry. Season evenly with salt, pepper, garlic powder, and smoked paprika.
  3. Season the Potatoes: Toss halved potatoes with olive oil, salt, pepper, and oregano in a mixing bowl. Spread on one side of the baking sheet.
  4. Arrange the Chicken: Place seasoned chicken skin-side up on the other side of the sheet, avoiding overlap.
  5. Make Garlic Parmesan Mixture: Mix minced garlic, melted butter, and Parmesan in a small bowl. Spoon generously over the chicken and drizzle over potatoes.
  6. Bake: Bake for 35–40 minutes, or until chicken reaches 165°F (74°C) and potatoes are fork-tender.
  7. Broil for Crispiness: Broil for 2–3 minutes to achieve a golden crust. Watch closely to prevent burning.
  8. Garnish and Serve: Sprinkle parsley over chicken and potatoes before serving, if desired.
