pounds baby potatoes, halved

1 teaspoon dried parsley

½ teaspoon paprika

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

Instructions

  1. Preheat the Oven
    Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan with olive oil or nonstick spray.

  2. Prepare the Chicken
    Pat chicken dry and season with salt, pepper, paprika, and half of the dried herbs.

  3. Season the Potatoes
    In a bowl, toss halved baby potatoes with olive oil, garlic, melted butter, Parmesan, and remaining herbs until evenly coated.

  4. Assemble the Dish
    Spread potatoes in a single layer in the baking dish. Nestle seasoned chicken thighs, skin-side up, among the potatoes.

  5. Bake
    Bake uncovered for 40–45 minutes, or until chicken reaches 165°F (74°C) and potatoes are fork-tender.

  6. Broil for Crispiness
    Broil for 2–3 minutes at the end for extra crispy skin, watching closely.

  7. Serve
    Garnish with fresh parsley and additional Parmesan if desired. Serve hot.

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.

  • Reheating: Reheat in a 350°F oven for 10–15 minutes or microwave for 2–3 minutes. For crispy skin, reheat chicken separately in the oven.
