Ingredients
4 bone-in, skin-on chicken thighs (or breasts)
1½ pounds baby potatoes, halved
4 tablespoons unsalted butter, melted
4 cloves garlic, minced
½ cup grated Parmesan cheese
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried parsley
½ teaspoon paprika
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
Fresh parsley, chopped (optional, for garnish)
Instructions

Preheat the Oven
Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan with olive oil or nonstick spray. -
Prepare the Chicken
Pat chicken dry and season with salt, pepper, paprika, and half of the dried herbs. -
Season the Potatoes
In a bowl, toss halved baby potatoes with olive oil, garlic, melted butter, Parmesan, and remaining herbs until evenly coated. -
Assemble the Dish
Spread potatoes in a single layer in the baking dish. Nestle seasoned chicken thighs, skin-side up, among the potatoes. -
Bake
Bake uncovered for 40–45 minutes, or until chicken reaches 165°F (74°C) and potatoes are fork-tender. -
Broil for Crispiness
Broil for 2–3 minutes at the end for extra crispy skin, watching closely. -
Serve
Garnish with fresh parsley and additional Parmesan if desired. Serve hot.
