Description

This Garlic Parmesan Chicken and Potatoes is an easy one-pan meal featuring juicy, seasoned chicken thighs and crispy roasted potatoes coated in a rich garlic Parmesan sauce. A quick, flavorful dinner with minimal cleanup!

  • Chicken:

    • 4 bone-in, skin-on chicken thighs
    • 1 tbsp olive oil
    • ½ tsp salt
    • ¼ tsp black pepper
    • ½ tsp dried Italian seasoning
    • ½ tsp paprika
  • Potatoes:

    • 1.5 lbs baby potatoes, halved
    • 2 tbsp olive oil
    • 4 cloves garlic, minced
    • ½ tsp salt
    • ¼ tsp black pepper
    • ½ tsp dried Italian seasoning

 

  • Toppings & Garnish:

    • 2 tbsp unsalted butter, melted
    • ½ cup grated Parmesan cheese
    • 1 tbsp fresh parsley, chopped

Instructions

  • Preheat the Oven

    • Preheat oven to 400°F (200°C). Grease or line a large baking sheet with parchment paper.
  • Season the Chicken

    • Pat chicken thighs dry. In a bowl, mix 1 tbsp olive oil, salt, pepper, Italian seasoning, and paprika. Rub onto chicken.
  • Prepare the Potatoes

    • Toss potatoes with olive oil, garlic, salt, pepper, and Italian seasoning. Spread evenly on the baking sheet.
  • Bake

    • Arrange seasoned chicken thighs among the potatoes, skin-side up. Roast for 35–40 minutes, or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
  • Add Parmesan and Butter

    • Drizzle melted butter over chicken and potatoes. Sprinkle Parmesan cheese on top. Bake for another 5 minutes until cheese melts.

 

  • Garnish & Serve

    • Sprinkle fresh parsley before serving. Enjoy hot!
