- 2 tbsp olive oil

- 2 tbsp unsalted butter, melted
- ½ cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions

Preheat the Oven
- Preheat oven to 400°F (200°C). Grease or line a large baking sheet with parchment paper.

Season the Chicken
- Pat chicken thighs dry. In a bowl, mix 1 tbsp olive oil, salt, pepper, Italian seasoning, and paprika. Rub onto chicken.

Prepare the Potatoes
- Toss potatoes with olive oil, garlic, salt, pepper, and Italian seasoning. Spread evenly on the baking sheet.

- Arrange seasoned chicken thighs among the potatoes, skin-side up. Roast for 35–40 minutes, or until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.

Add Parmesan and Butter
- Drizzle melted butter over chicken and potatoes. Sprinkle Parmesan cheese on top. Bake for another 5 minutes until cheese melts.
