  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

A simple, flavorful one-pan dinner featuring crispy, golden-brown chicken and perfectly roasted potatoes coated in a garlic parmesan seasoning. Ideal for busy weeknights with minimal prep and cleanup.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (or thighs)
  • 1.5 lbs baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Ingredients

  1. Preheat the oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or lightly grease with oil.
  3. In a small bowl, mix the minced garlic, olive oil, salt, black pepper, Italian seasoning, paprika, and red pepper flakes.

Step 2: Season and Arrange 4. Toss the halved potatoes in half of the seasoning mixture and spread them on one side of the baking sheet. 5. Coat the chicken breasts in the remaining seasoning mixture and place them on the other side of the pan. 6. Sprinkle grated Parmesan evenly over the chicken and potatoes.

Step 3: Bake 7. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender. 8. In the last 5 minutes, drizzle melted butter over the dish and broil for extra crispiness.

Step 4: Serve 9. Garnish with fresh parsley and serve hot. Pair with a side salad or steamed vegetables for a complete meal.

Notes:

  • Add Vegetables: Toss in asparagus, green beans, or broccoli for extra nutrition.
  • Different Proteins: Use bone-in chicken thighs, shrimp, or salmon for variety.

  • Extra Crunch: Add panko breadcrumbs mixed with Parmesan for a crispier topping.

Notes

  • Refrigeration: Store leftovers in an airtight container for up to 3 days.
  • Reheating: Warm in the oven at 350°F (175°C) for 10-12 minutes or microwave in 30-second intervals.
