- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup baby spinach (optional)
- 1/2 cup sun-dried tomatoes, chopped (optional)
- 1 tbsp butter
- Fresh parsley, chopped, for garnish
Instructions
Step 1: Cook the Chicken
- Heat olive oil in a large skillet over medium heat.
- Add chicken, season with salt, black pepper, and Italian seasoning.
- Cook for 5-7 minutes until golden brown and cooked through.
- Remove chicken from skillet and set aside.
Step 2: Prepare the Garlic Sauce
- In the same skillet, melt butter over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Pour in chicken broth, bring to a simmer, and scrape up browned bits.
Step 3: Cook the Gnocchi
- Add gnocchi to the skillet, stirring to coat.
- Cover and simmer for 3-5 minutes until gnocchi softens.
Step 4: Finish the Dish
- Pour in heavy cream and stir until combined.
- Add Parmesan cheese, stirring until sauce thickens.
- Return cooked chicken to the skillet and mix well.
- Stir in baby spinach and sun-dried tomatoes (if using) and cook for 1-2 minutes.
- Remove from heat and garnish with parsley.
