Description

Ingredients

  • 1 ½ lbs sirloin steak (or ribeye), cut into bite-sized cubes
  • 1 ½ lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp red pepper flakes (optional)
  • 1 tsp dried Italian seasoning
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme or rosemary (optional)

Instructions

  1. Cook the Potatoes
    • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
    • Add the halved baby potatoes and season with salt, pepper, and paprika.
    • Cook for about 12–15 minutes, stirring occasionally, until golden brown and fork-tender.
    • Remove the potatoes from the pan and set aside.
  2. Sear the Steak Bites
    • In the same pan, add the remaining olive oil.
    • Season the steak bites with salt, black pepper, and Italian seasoning.
    • Sear the steak pieces in a single layer for about 2–3 minutes per side, or until browned and cooked to desired doneness.
    • Remove the steak from the pan and set aside.
  3. Make the Garlic Butter Sauce
    • Reduce the heat to medium and add butter to the pan.
    • Stir in the minced garlic, red pepper flakes, and fresh thyme or rosemary (if using).
    • Cook for about 1 minute until fragrant, stirring continuously.
  4. Combine Everything
    • Return the cooked potatoes and steak bites to the pan, tossing them in the garlic butter sauce.
    • Cook for another 2–3 minutes to allow the flavors to blend.
    • Sprinkle with fresh parsley before serving.
