A quick and easy one-pan meal, Garlic Butter Steak Bites and Potatoes pairs juicy, seared steak with crispy potatoes in a rich garlic butter sauce. Perfect for busy weeknights or special occasions!

- 1 ½ lbs sirloin steak (or ribeye), cut into bite-sized cubes
- 1 ½ lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp red pepper flakes (optional)
- 1 tsp dried Italian seasoning
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh thyme or rosemary (optional)
Instructions
- Cook the Potatoes
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the halved baby potatoes and season with salt, pepper, and paprika.
- Cook for about 12–15 minutes, stirring occasionally, until golden brown and fork-tender.
- Remove the potatoes from the pan and set aside.
- Sear the Steak Bites
- In the same pan, add the remaining olive oil.
- Season the steak bites with salt, black pepper, and Italian seasoning.
- Sear the steak pieces in a single layer for about 2–3 minutes per side, or until browned and cooked to desired doneness.
- Remove the steak from the pan and set aside.
- Make the Garlic Butter Sauce
- Reduce the heat to medium and add butter to the pan.
- Stir in the minced garlic, red pepper flakes, and fresh thyme or rosemary (if using).
- Cook for about 1 minute until fragrant, stirring continuously.
- Combine Everything
- Return the cooked potatoes and steak bites to the pan, tossing them in the garlic butter sauce.
- Cook for another 2–3 minutes to allow the flavors to blend.
- Sprinkle with fresh parsley before serving.
Notes
- Different cuts of beef – Try filet mignon, New York strip, or ribeye.
- Add vegetables – Mushrooms, bell peppers, or asparagus for more texture and nutrients.
- Spicy kick – Increase red pepper flakes or add cayenne.
- Cheesy finish – Sprinkle with Parmesan or crumbled blue cheese.
