Scale
  • Steak & Potatoes:
    • 1 ½ lbs sirloin steak, cut into 1-inch cubes
    • 1 lb baby potatoes, halved
  • Cooking Fats:
    • 3 tbsp unsalted butter, divided
    • 2 tbsp olive oil
  • Seasonings & Aromatics:
    • 4 cloves garlic, minced
    • 1 tsp salt (or to taste)
    • ½ tsp black pepper
    • ½ tsp smoked paprika
    • ½ tsp onion powder
    • ½ tsp red pepper flakes (optional, for heat)
    • 1 tbsp fresh parsley, chopped (for garnish)
    • 1 tsp fresh thyme leaves (optional)

Instructions

  • Prepare the Ingredients

    • Pat the steak bites dry with paper towels for better searing.
    • Halve the baby potatoes for even cooking.
  • Cook the Potatoes

    • Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium heat.
    • Add the potatoes, season with salt, pepper, and smoked paprika.
    • Cook for about 10-12 minutes, stirring occasionally, until golden brown and fork-tender.
    • Remove from skillet and set aside.
  • Sear the Steak Bites

    • In the same skillet, add 1 tbsp olive oil and increase heat to medium-high.
    • Add steak bites in a single layer, seasoning with salt, black pepper, and onion powder.
    • Sear for 2-3 minutes per side until browned and cooked to desired doneness (130°F for medium-rare, 140°F for medium).
    • Remove from skillet and set aside.
  • Make the Garlic Butter Sauce

    • Reduce heat to medium, then add 2 tbsp butter to the skillet.
    • Stir in minced garlic and red pepper flakes (if using), cooking for 30 seconds until fragrant.
    • Return steak and potatoes to skillet, tossing everything in the garlic butter sauce.
  • Garnish & Serve

    • Sprinkle with fresh parsley and thyme.
    • Serve immediately while warm.

Notes

  • Steak Options: Substitute sirloin with ribeye, New York strip, or filet mignon.
  • Vegetable Additions: Add mushrooms, asparagus, or bell peppers for variety.
  • Low-Carb Swap: Replace potatoes with cauliflower or zucchini.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheating: Warm in a skillet with butter over medium heat. Avoid microwaving to prevent steak from becoming rubbery.
  • Make-Ahead Tip: Pre-cut the steak and potatoes for faster prep, but cook fresh for best results.
