- Halve the baby potatoes for even cooking.

Cook the Potatoes
- Heat 1 tbsp olive oil and 1 tbsp butter in a large skillet over medium heat.
- Add the potatoes, season with salt, pepper, and smoked paprika.
- Cook for about 10-12 minutes, stirring occasionally, until golden brown and fork-tender.
- Remove from skillet and set aside.

- In the same skillet, add 1 tbsp olive oil and increase heat to medium-high.
- Add steak bites in a single layer, seasoning with salt, black pepper, and onion powder.
- Sear for 2-3 minutes per side until browned and cooked to desired doneness (130°F for medium-rare, 140°F for medium).
- Remove from skillet and set aside.

- Reduce heat to medium, then add 2 tbsp butter to the skillet.
- Stir in minced garlic and red pepper flakes (if using), cooking for 30 seconds until fragrant.
- Return steak and potatoes to skillet, tossing everything in the garlic butter sauce.
