For the Steak and Potatoes:
- 1.5 lbs sirloin steak, cut into bite-sized cubes
- 1 lb baby potatoes, halved or quartered
- 3 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 4 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Cook the Potatoes
- Heat 2 tbsp olive oil in a large skillet over medium-high heat.
- Add potatoes, season with salt, black pepper, and smoked paprika.
- Cook for 12-15 minutes, stirring occasionally, until golden brown and fork-tender. Remove and set aside.
- Sear the Steak Bites
- In the same pan, add 1 tbsp olive oil and 1 tbsp butter.
- Increase heat to high and add steak bites in a single layer.
- Season with salt, black pepper, and onion powder.
- Sear for 2-3 minutes per side until browned and cooked to desired doneness. Remove and set aside.
- Make the Garlic Butter Sauce
- Reduce heat to medium, add remaining 2 tbsp butter.
- Stir in minced garlic and crushed red pepper flakes; cook for 30 seconds until fragrant.
- Return steak and potatoes to the pan, tossing to coat in sauce.
- Garnish and Serve
- Sprinkle with fresh parsley.
- Serve immediately and enjoy!
