  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder

For the garlic butter sauce:

  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 teaspoon fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Potatoes
    • Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil.
    • Add halved baby potatoes and season with garlic powder, paprika, salt, and black pepper.
    • Cook for 10–12 minutes, stirring occasionally, until golden brown and fork-tender.
    • Remove from pan and set aside.
  2. Sear the Steak Bites
    • While the potatoes cook, season the steak bites with salt, black pepper, smoked paprika, and onion powder.
    • In the same skillet, heat 2 tablespoons of olive oil over high heat.
    • Add the steak bites in a single layer (cook in batches if necessary) and sear for about 2 minutes per side.
    • Remove the steak from the skillet and set aside.
  3. Make the Garlic Butter Sauce
    • Reduce heat to medium and add butter to the skillet.
    • Stir in minced garlic and thyme, cooking for 30 seconds to 1 minute until fragrant.
    • Return the cooked steak and potatoes to the skillet, tossing to coat in the garlic butter sauce.
  4. Serve and Garnish
    • Remove from heat and sprinkle with fresh parsley.
    • Serve immediately and enjoy!
