- 1 lb sirloin steak, cut into bite-sized pieces
- 1 1/2 lbs baby potatoes, halved
- 3 tbsp unsalted butter, divided
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 1 tsp fresh rosemary (or 1/2 tsp dried rosemary)
- 1/2 tsp paprika
- 1/2 tsp onion powder
- Salt and black pepper, to taste
- 1/4 cup beef broth (optional, for extra flavor)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Cook the potatoes: Heat 1 tbsp butter and 1 tbsp olive oil in a large skillet over medium heat. Add potatoes, season with salt, pepper, and paprika, and cook for 12-15 minutes until golden and fork-tender. Remove and set aside.
- Sear the steak: In the same skillet, add the remaining olive oil over medium-high heat. Add steak bites in a single layer, seasoning with salt, pepper, onion powder, thyme, and rosemary. Sear for 2-3 minutes per side. Remove and set aside.
- Make the garlic butter sauce: Reduce heat to medium, add remaining butter, and sauté garlic for 30 seconds until fragrant. Add beef broth (if using) and simmer for 1 minute.
- Combine and serve: Return steak and potatoes to the skillet, tossing to coat in the garlic butter sauce. Warm through for 1 minute. Garnish with fresh parsley and serve immediately.
