Ingredients

  • 1 lb steak (ribeye, sirloin, or New York strip), cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 3 tbsp unsalted butter, divided
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary (or ½ tsp dried)
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • ½ tsp crushed red pepper flakes (optional)
  • ¼ cup beef broth (or water)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

1. Cook the Potatoes

  • Heat 1 tbsp butter and 1 tbsp olive oil in a large skillet over medium-high heat.
  • Add the halved potatoes, cut side down, and season with salt, pepper, and paprika.
  • Cook for about 10-12 minutes, stirring occasionally, until golden and fork-tender.
  • Remove the potatoes from the skillet and set aside.

2. Sear the Steak

  • In the same skillet, add the remaining olive oil and heat over high heat.
  • Add the steak pieces, season with salt and pepper, and sear for 2-3 minutes per side until browned and cooked to your preference.
  • Remove the steak from the skillet and set aside.

3. Make the Garlic Butter Sauce

  • Reduce heat to medium and add the remaining butter to the skillet.
  • Stir in the minced garlic, thyme, and rosemary, cooking for about 30 seconds until fragrant.
  • Pour in the beef broth to deglaze the pan, scraping up any browned bits for extra flavor.

4. Combine and Serve

  • Return the cooked potatoes and steak to the skillet, tossing to coat in the garlic butter sauce.
  • Cook for another 1-2 minutes until heated through.
  • Garnish with chopped parsley and serve immediately.
