- 1 lb steak (ribeye, sirloin, or New York strip), cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 3 tbsp unsalted butter, divided
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tsp fresh rosemary (or ½ tsp dried)
- ½ tsp smoked paprika
- Salt and pepper, to taste
- ½ tsp crushed red pepper flakes (optional)
- ¼ cup beef broth (or water)
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Cook the Potatoes
- Heat 1 tbsp butter and 1 tbsp olive oil in a large skillet over medium-high heat.
- Add the halved potatoes, cut side down, and season with salt, pepper, and paprika.
- Cook for about 10-12 minutes, stirring occasionally, until golden and fork-tender.
- Remove the potatoes from the skillet and set aside.
2. Sear the Steak
- In the same skillet, add the remaining olive oil and heat over high heat.
- Add the steak pieces, season with salt and pepper, and sear for 2-3 minutes per side until browned and cooked to your preference.
- Remove the steak from the skillet and set aside.
3. Make the Garlic Butter Sauce
- Reduce heat to medium and add the remaining butter to the skillet.
- Stir in the minced garlic, thyme, and rosemary, cooking for about 30 seconds until fragrant.
- Pour in the beef broth to deglaze the pan, scraping up any browned bits for extra flavor.
4. Combine and Serve
- Return the cooked potatoes and steak to the skillet, tossing to coat in the garlic butter sauce.
- Cook for another 1-2 minutes until heated through.
- Garnish with chopped parsley and serve immediately.
