  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced

  • 1 tsp paprika
  • 1/2 tsp dried thyme (or fresh)
  • 1/2 tsp dried rosemary (or fresh)
  • 1/2 tsp red pepper flakes (optional)

For the Creamy Mashed Potatoes:

  • 2 lbs russet or Yukon gold potatoes, peeled and cut into chunks
  • 1/2 cup whole milk (or heavy cream)
  • 4 tbsp unsalted butter
  • 1/4 cup sour cream (optional for extra creaminess)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)

Instructions

Step 1: Prepare the Mashed Potatoes

  1. Place potato chunks in a large pot and cover with cold water. Add a pinch of salt.
  2. Bring to a boil over medium-high heat and cook for 15-20 minutes until fork-tender.
  3. Drain and return potatoes to the pot.
  4. Add butter, warm milk, salt, pepper, and garlic powder. Mash until smooth and creamy.
  5. Stir in sour cream if using. Cover to keep warm.

Step 2: Cook the Pork Chops

  1. Pat pork chops dry with a paper towel. Season with salt, black pepper, paprika, thyme, rosemary, and red pepper flakes.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear pork chops for 3-4 minutes per side until golden brown. Remove and set aside.
  4. Reduce heat to medium, add butter, and stir in minced garlic. Cook for 30 seconds until fragrant.
  5. Return pork chops to the pan, spooning garlic butter over them. Cook for another 2-3 minutes until the internal temperature reaches 145°F (63°C).
  6. Remove from heat and let rest for a few minutes before serving.

Step 3: Serve and Enjoy

  1. Plate the mashed potatoes and top with the garlic butter pork chops.
  2. Drizzle remaining butter sauce over the pork chops.
  3. Garnish with fresh parsley or additional herbs if desired.
