  • 1/2 cup chopped tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1/4 cup pickled jalapeños (optional)
  • 1/4 cup sour cream (for serving)
  • Cooking spray or olive oil

Instructions

  • Prepare the Ground Beef:

    • In a skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon.
    • Drain excess grease and add taco seasoning with a few tablespoons of water. Stir and cook for another 2–3 minutes.
  • Crisp the Tortillas:

    • Preheat oven to 400°F (200°C).
    • Lightly spray or brush tortillas with olive oil.
    • Place on a baking sheet and bake for 5 minutes per side until golden and crispy.
  • Assemble the Pizzas:

    • Spread refried beans on two crispy tortillas.
    • Add a layer of seasoned ground beef.
    • Top with another crispy tortilla.
  • Add Toppings:

    • Spread enchilada sauce or taco sauce on top.
    • Sprinkle with shredded cheese.
    • Add chopped tomatoes, black olives, and jalapeños.
  • Bake Until Golden:

    • Return to the oven and bake for 7–10 minutes until the cheese is melted and bubbly.
  • Garnish & Serve:

    • Remove from oven and top with green onions.
    • Slice into quarters and serve with sour cream.
