Description

French Onion Meatloaf is a savory twist on a classic dish, featuring caramelized onions, juicy beef, and melted Swiss cheese. Perfect for family dinners or an elevated comfort food experience.

Ingredients

Scale

For the Meatloaf:

  • 2 pounds ground beef (80% lean)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 egg, lightly beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup beef broth

For the French Onion Mixture:

  • 2 tablespoons unsalted butter
  • 2 large yellow onions, thinly sliced
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/4 cup beef broth

For the Topping:

  • 46 slices Swiss cheese
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prepare the French Onion Mixture
    • Heat butter in a skillet over medium heat.
    • Add sliced onions, sugar, and salt. Sauté for 15-20 minutes, stirring frequently, until golden and caramelized.
    • Stir in thyme and beef broth, cooking 2-3 minutes until the liquid mostly evaporates. Set aside to cool.
  2. Make the Meatloaf Mixture
    • In a large bowl, combine ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, black pepper, and broth.
    • Mix gently with hands until combined (do not overmix).
  3. Assemble the Meatloaf
    • Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper.
    • Spread half the meatloaf mixture on the prepared pan, shaping it into a loaf.
    • Add the cooled onion mixture on top, leaving a small border.
    • Cover with the remaining meatloaf mixture, sealing edges to encase the onions.
  4. Bake
    • Bake for 45-50 minutes or until internal temperature reaches 160°F (71°C).
    • Remove from oven and top with Swiss cheese slices, letting them melt naturally.
  5. Serve
    • Garnish with parsley if desired. Slice and serve warm with sides like mashed potatoes or roasted vegetables.
