Instructions
- Prepare the French Onion Mixture
- Heat butter in a skillet over medium heat.
- Add sliced onions, sugar, and salt. Sauté for 15-20 minutes, stirring frequently, until golden and caramelized.
- Stir in thyme and beef broth, cooking 2-3 minutes until the liquid mostly evaporates. Set aside to cool.
- Make the Meatloaf Mixture
- In a large bowl, combine ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, black pepper, and broth.
- Mix gently with hands until combined (do not overmix).
- Assemble the Meatloaf
- Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper.
- Spread half the meatloaf mixture on the prepared pan, shaping it into a loaf.
- Add the cooled onion mixture on top, leaving a small border.
- Cover with the remaining meatloaf mixture, sealing edges to encase the onions.
- Bake
- Bake for 45-50 minutes or until internal temperature reaches 160°F (71°C).
- Remove from oven and top with Swiss cheese slices, letting them melt naturally.
- Serve
- Garnish with parsley if desired. Slice and serve warm with sides like mashed potatoes or roasted vegetables.
