Ingredients

Scale
For the Crust (optional, or use store-bought)
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • 34 tablespoons ice water
For the Filling
  • 2 medium turnips, peeled and grated (about 1 ½ cups)
  • 1 small onion, finely chopped
  • 1 tablespoon butter or olive oil
  • 4 large eggs
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • 1 cup shredded cheese (Gruyère, Swiss, or cheddar)
  • ¼ teaspoon ground nutmeg (optional)

Instructions

Prepare the Crust (Skip if Using Pre-Made)
  1. In a mixing bowl, whisk together flour and salt.
  2. Cut in cold butter with a pastry cutter or fork until mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, until the dough comes together.
  4. Form into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  5. Roll out on a floured surface, fit into a 9-inch pie dish, and trim edges.
  6. Pre-bake at 375°F (190°C) for 10 minutes with pie weights or dried beans.
Prepare the Filling
  1. In a skillet over medium heat, melt butter or heat oil.
  2. Sauté onion until translucent (about 3 minutes).
  3. Add grated turnips and cook for another 3-4 minutes, stirring occasionally. Remove from heat.
Assemble the Quiche
  1. In a bowl, whisk eggs, cream, salt, pepper, thyme, and nutmeg.
  2. Stir in the cooked turnip mixture and shredded cheese.
  3. Pour filling into the pre-baked crust, spreading evenly.
Bake the Quiche
  1. Reduce oven temperature to 350°F (175°C).
  2. Bake for 30-35 minutes, until the center is set but slightly wobbly.
  3. Cool for 10 minutes before slicing and serving.

Notes

  • Crustless Option: Skip the crust for a gluten-free, low-carb version.
  • Cheese Variations: Try feta for a tangy twist or smoked Gouda for added depth.
  • Add-Ins: Cooked bacon, ham, or sautéed mushrooms enhance flavor.
  • Herb Swaps: Use rosemary, dill, or parsley instead of thyme.
  • Dairy-Free Alternative: Use full-fat coconut milk and dairy-free cheese.
