  • 1/2 cup sour cream
  • 1/4 cup heavy cream

  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the Crust:
    • Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
    • Mix graham cracker crumbs, sugar, cinnamon, and melted butter.
    • Press the mixture firmly into the pan’s bottom.
    • Bake for 8-10 minutes and let cool.
  2. Make the Cinnamon Swirl:
    • Mix brown sugar, cinnamon, and melted butter in a small bowl. Set aside.
  3. Prepare the Cheesecake Filling:
    • Beat cream cheese and sugar until smooth.
    • Add eggs one at a time, mixing well after each.
    • Stir in vanilla, sour cream, and heavy cream until smooth.
  4. Assemble the Cheesecake:
    • Pour half of the cheesecake batter over the crust.
    • Drizzle half of the cinnamon swirl and swirl with a knife.
    • Repeat with remaining batter and cinnamon swirl.
  5. Bake the Cheesecake:
    • Wrap the pan bottom with foil and place in a larger baking dish.
    • Fill the baking dish with hot water (water bath method).
    • Bake for 50-60 minutes, until the center is slightly jiggly but set around edges.
    • Turn off the oven, crack the door open, and let cool inside for 1 hour.
    • Refrigerate for at least 4 hours or overnight.
  6. Prepare the Cream Cheese Glaze:
    • Whisk cream cheese, powdered sugar, milk, and vanilla until smooth.
    • Drizzle over chilled cheesecake before serving.
