- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1/4 cup heavy cream
For the Cream Cheese Glaze:
- 4 oz cream cheese, softened
- 1/2 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Prepare the Crust:
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Mix graham cracker crumbs, sugar, cinnamon, and melted butter.
- Press the mixture firmly into the pan’s bottom.
- Bake for 8-10 minutes and let cool.
- Make the Cinnamon Swirl:
- Mix brown sugar, cinnamon, and melted butter in a small bowl. Set aside.
- Prepare the Cheesecake Filling:
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Stir in vanilla, sour cream, and heavy cream until smooth.
- Assemble the Cheesecake:
- Pour half of the cheesecake batter over the crust.
- Drizzle half of the cinnamon swirl and swirl with a knife.
- Repeat with remaining batter and cinnamon swirl.
- Bake the Cheesecake:
- Wrap the pan bottom with foil and place in a larger baking dish.
- Fill the baking dish with hot water (water bath method).
- Bake for 50-60 minutes, until the center is slightly jiggly but set around edges.
- Turn off the oven, crack the door open, and let cool inside for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Prepare the Cream Cheese Glaze:
- Whisk cream cheese, powdered sugar, milk, and vanilla until smooth.
- Drizzle over chilled cheesecake before serving.
