  • 12 oz pasta (penne, fettuccine, or linguine)
  • 2 tbsp Jamaican jerk seasoning
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced (red, yellow, or green)
  • 1 cup heavy cream or coconut milk
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese, grated
  • 1 Scotch bonnet pepper, finely chopped (optional for extra heat)
  • 1 tsp smoked paprika
  • 1/2 tsp thyme (dried or fresh)
  • Salt and black pepper to taste
  • 1 tbsp lime juice
  • Fresh parsley or green onions for garnish

Instructions

  1. Cook the Pasta
    • Boil water in a large pot and add a generous pinch of salt.
    • Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Season and Cook the Shrimp
    • In a bowl, toss shrimp with jerk seasoning, smoked paprika, and a bit of salt.
    • Heat olive oil in a large skillet over medium-high heat.
    • Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove from skillet and set aside.
  3. Prepare the Sauce
    • In the same skillet, add a little more olive oil if needed.
    • Sauté onion, garlic, and Scotch bonnet pepper (if using) until fragrant.
    • Add bell peppers and cook until slightly softened.
    • Pour in chicken broth and let it reduce slightly.
    • Lower heat and stir in heavy cream or coconut milk.
    • Add Parmesan cheese, thyme, salt, and black pepper. Simmer for a few minutes until the sauce thickens.
  4. Combine and Serve
    • Add cooked pasta and shrimp to the sauce. Toss to coat evenly.
    • Stir in lime juice for brightness.
    • Garnish with parsley or green onions. Serve hot.
