- 1 lb shrimp, peeled and deveined
- 12 oz pasta (penne, fettuccine, or linguine)
- 2 tbsp Jamaican jerk seasoning
- 2 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, sliced (red, yellow, or green)
- 1 cup heavy cream or coconut milk
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese, grated
- 1 Scotch bonnet pepper, finely chopped (optional for extra heat)
- 1 tsp smoked paprika
- 1/2 tsp thyme (dried or fresh)
- Salt and black pepper to taste
- 1 tbsp lime juice
- Fresh parsley or green onions for garnish
Instructions
- Cook the Pasta
- Boil water in a large pot and add a generous pinch of salt.
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Season and Cook the Shrimp
- In a bowl, toss shrimp with jerk seasoning, smoked paprika, and a bit of salt.
- Heat olive oil in a large skillet over medium-high heat.
- Add shrimp and cook for 2–3 minutes per side until pink and opaque. Remove from skillet and set aside.
- Prepare the Sauce
- In the same skillet, add a little more olive oil if needed.
- Sauté onion, garlic, and Scotch bonnet pepper (if using) until fragrant.
- Add bell peppers and cook until slightly softened.
- Pour in chicken broth and let it reduce slightly.
- Lower heat and stir in heavy cream or coconut milk.
- Add Parmesan cheese, thyme, salt, and black pepper. Simmer for a few minutes until the sauce thickens.
- Combine and Serve
- Add cooked pasta and shrimp to the sauce. Toss to coat evenly.
- Stir in lime juice for brightness.
- Garnish with parsley or green onions. Serve hot.
