Ingredients

Scale
  • 1 lb boneless, skinless chicken breast or thighs, cut into thin strips
  • 4 green onions, sliced into 1-inch pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon cornstarch
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon red pepper flakes (optional, for spice)
  • 1/4 cup chicken broth or water
  • 1 teaspoon sugar (optional, for slight sweetness)

  • Cooked rice, for serving

Instructions

Step 1: Prepare the Chicken

  • In a bowl, mix the chicken strips with 1 teaspoon of soy sauce and the cornstarch. Let it marinate for about 10 minutes.

Step 2: Make the Sauce

  • In a small bowl, combine the remaining soy sauce, oyster sauce, sesame oil, chicken broth (or water), and sugar. Set aside.

Step 3: Cook the Chicken

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Add the marinated chicken and stir-fry for 3–4 minutes until golden brown and cooked through. Remove from the pan and set aside.

Step 4: Stir-Fry the Aromatics

  • Add the remaining tablespoon of vegetable oil to the skillet.
  • Add the garlic, ginger, and red pepper flakes (if using). Stir-fry for 30 seconds until fragrant.

Step 5: Combine Everything

  • Return the cooked chicken to the pan and toss with the green onions.
  • Pour in the prepared sauce and stir well to coat the chicken.
  • Cook for another 1–2 minutes until everything is well combined and heated through.

Step 6: Serve

  • Serve hot over cooked rice and enjoy!

Notes

  • Add more vegetables: Bell peppers, carrots, or snap peas add extra crunch.
  • Make it spicier: Increase red pepper flakes or add chili oil.
  • Swap the protein: Use shrimp, beef, or tofu instead of chicken.

  • Try different sauces: Hoisin sauce or teriyaki can provide a unique twist.
