Effortless twice baked potatoes with a crispy skin and creamy, cheesy filling. This easy comfort food recipe is perfect as a side dish or main course. Customize with bacon, green onions, or your favorite toppings!

- 4 large russet potatoes
- 4 tbsp butter
- ½ cup sour cream
- 1 cup shredded cheddar cheese (plus extra for topping)
- 2 green onions, chopped
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp milk
- 3 strips bacon, cooked and crumbled (optional)
Instructions
- Preheat & Bake: Preheat the oven to 400°F (200°C). Scrub the potatoes, dry them, and place them directly on the oven rack or a baking sheet. Bake for 50-60 minutes until tender.
- Cool & Slice: Let the potatoes cool for 10 minutes, then cut each one in half lengthwise.
- Scoop & Mash: Carefully scoop out the inside, leaving a thin layer of potato in the skin. Mash the scooped potato in a bowl.
- Prepare Filling: Add butter, sour cream, 1 cup shredded cheddar, green onions, garlic powder, salt, pepper, and milk. Mix until smooth and creamy.
- Stuff & Top: Spoon the filling back into the potato skins. Top with extra shredded cheese and crumbled bacon (if using).
- Bake Again: Reduce oven to 375°F (190°C) and bake for 15-20 minutes until the cheese is melted and golden.
- Serve & Enjoy: Garnish with extra green onions or a dollop of sour cream. Serve hot!
