  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 8 ounces cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¾ cup grated Asiago cheese
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • ½ teaspoon red pepper flakes (optional)

 

  • Fresh parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Chicken

  • Pat the chicken breasts dry. Season with salt, pepper, garlic powder, and onion powder on both sides.

Step 2: Cook the Chicken

  • Heat olive oil in a large skillet over medium-high heat.
  • Sear chicken for 4-5 minutes per side until golden brown and cooked through (internal temp: 165°F).
  • Remove from skillet, cover with foil, and set aside.

Step 3: Sauté the Mushrooms

  • In the same skillet, melt butter.
  • Add sliced mushrooms and cook for 5 minutes until golden and tender.
  • Stir in minced garlic and cook for another 30 seconds until fragrant.

Step 4: Make the Sauce

  • Pour in chicken broth and scrape up any browned bits. Simmer for 2 minutes.
  • Reduce heat to low. Stir in heavy cream, Asiago cheese, thyme, and red pepper flakes.
  • Stir continuously until the cheese melts and the sauce thickens (about 3-4 minutes).

Step 5: Combine and Serve

 

  • Return the chicken to the skillet, coating it in the sauce.
  • Let it simmer for 2 minutes to absorb flavors.
  • Garnish with fresh parsley and serve immediately.
