  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 2 tablespoons unsalted butter
  • 2 green onions, chopped (for garnish)

Instructions

  1. Cook the Potatoes: In a large pot, add diced potatoes and chicken broth. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15–20 minutes until fork-tender.
  2. Prepare the Base: In a separate pan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in onion powder, smoked paprika (if using), and black pepper.
  3. Blend for Creaminess: Use an immersion blender to partially blend the potatoes in the pot, leaving some chunks for texture. If using a standard blender, carefully blend half the soup and return it to the pot.
  4. Add Dairy & Cheese: Reduce heat to low. Stir in heavy cream, milk, and shredded cheddar cheese. Mix until cheese is melted and incorporated.
  5. Finish with Bacon & Sour Cream: Add crumbled bacon and sour cream, stirring until combined. Taste and adjust seasoning as needed.
  6. Serve & Garnish: Ladle soup into bowls and top with extra cheese, green onions, and more bacon if desired. Serve warm.
