- 4 large russet potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 4 slices bacon, cooked and crumbled
- 2 cloves garlic, minced
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika (optional)
- 2 tablespoons unsalted butter
- 2 green onions, chopped (for garnish)
Instructions
- Cook the Potatoes: In a large pot, add diced potatoes and chicken broth. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 15–20 minutes until fork-tender.
- Prepare the Base: In a separate pan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in onion powder, smoked paprika (if using), and black pepper.
- Blend for Creaminess: Use an immersion blender to partially blend the potatoes in the pot, leaving some chunks for texture. If using a standard blender, carefully blend half the soup and return it to the pot.
- Add Dairy & Cheese: Reduce heat to low. Stir in heavy cream, milk, and shredded cheddar cheese. Mix until cheese is melted and incorporated.
- Finish with Bacon & Sour Cream: Add crumbled bacon and sour cream, stirring until combined. Taste and adjust seasoning as needed.
- Serve & Garnish: Ladle soup into bowls and top with extra cheese, green onions, and more bacon if desired. Serve warm.

- Storage: Refrigerate in an airtight container for up to 4 days. Freeze for up to 3 months.
- Reheating: Warm on the stove over low heat, stirring occasionally. Add a splash of milk if needed.
