Ingredients

Scale
  • 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • ¼ cup soy sauce (low-sodium recommended)
  • 2 tbsp honey (or brown sugar)
  • 1 tbsp rice vinegar
  • 1 tbsp mirin (optional, for extra depth of flavor)
  • 1 tsp cornstarch mixed with 1 tbsp water (slurry)
  • ½ tsp sesame oil (optional, for extra richness)
  • 1 tsp sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions

  • Cook the Chicken:

    • Heat vegetable oil in a large skillet over medium heat.
    • Add chicken and cook for 4–5 minutes per side until golden brown and fully cooked. Remove from pan and set aside.
  • Make the Teriyaki Sauce:

    • In the same pan, sauté garlic and ginger for 30 seconds until fragrant.
    • Add soy sauce, honey, rice vinegar, and mirin. Stir and bring to a simmer.
  • Thicken the Sauce:

    • Stir in cornstarch slurry and mix well. Simmer for 1–2 minutes until thickened.
    • Add sesame oil, if using.
  • Coat the Chicken:

    • Return the cooked chicken to the pan and toss in the teriyaki sauce. Cook for 1 minute to absorb flavors.
  • Serve:

    • Garnish with sesame seeds and green onions.
    • Serve over steamed rice, noodles, or with vegetables.

Notes

  • Spicy Teriyaki Chicken: Add ½ tsp red pepper flakes or a drizzle of sriracha.
  • Gluten-Free Version: Use tamari or coconut aminos instead of soy sauce.
  • Extra Veggies: Add bell peppers, broccoli, or carrots while cooking.
  • Grilled Teriyaki Chicken: Marinate chicken for 30 minutes and grill instead of pan-frying.
