Scale
  • Pork Chops:
    • 4 bone-in or boneless pork chops (about 1-inch thick)
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon paprika
    • ¼ cup all-purpose flour (for dredging)
  • Cooking Essentials:
    • 2 tablespoons olive oil or butter
  • Gravy:
    • 1 medium onion, thinly sliced
    • 1 cup mushrooms, sliced (optional)
    • 2 cloves garlic, minced
    • 1 cup chicken broth
    • ½ cup heavy cream or whole milk
    • 1 teaspoon Worcestershire sauce
    • 1 teaspoon Dijon mustard (optional)
    • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening, if needed)
  • Garnish:
    • Chopped parsley

Instructions

  • Prepare the Pork Chops
    • Pat pork chops dry with a paper towel.
    • Season both sides with salt, black pepper, garlic powder, onion powder, and paprika.
    • Lightly dredge in flour, shaking off excess.
  • Sear the Pork Chops
    • Heat olive oil or butter in a large skillet over medium-high heat.
    • Sear pork chops for 3-4 minutes per side until golden brown.
    • Remove and set aside.
  • Sauté Onions and Mushrooms
    • In the same skillet, add sliced onions and mushrooms.
    • Cook over medium heat for 4-5 minutes until softened.
    • Stir in minced garlic and cook for 30 seconds.
  • Make the Gravy
    • Pour in chicken broth, scraping up browned bits from the pan.
    • Stir in heavy cream, Worcestershire sauce, and Dijon mustard.
    • Simmer for 2-3 minutes.
  • Thicken the Gravy (If Needed)
    • If gravy is too thin, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the sauce.
    • Simmer for 1-2 minutes until thickened.
  • Smother the Pork Chops
    • Return pork chops to the skillet and spoon gravy over them.
    • Cover and let simmer for 10-15 minutes until pork reaches an internal temperature of 145°F.
  • Serve & Enjoy
    • Garnish with chopped parsley.
    • Serve with mashed potatoes, rice, or roasted vegetables.

Notes

  • Creamy Mushroom Gravy: Use more mushrooms and add sour cream.
  • Spicy Kick: Add cayenne pepper or red pepper flakes.
  • Low-Carb Version: Skip flour dredging and use xanthan gum to thicken.
  • Herb-Infused: Add fresh thyme or rosemary for extra depth.

Storage & Reheating

  • Refrigeration: Store leftovers in an airtight container for up to 3 days.
  • Freezing: Freeze in a sealed container for up to 2 months. Thaw overnight in the fridge before reheating.
  • Reheating: Warm on the stovetop over low heat, adding a splash of broth or cream to retain moisture.
