- 4 bone-in or boneless pork chops (about 1-inch thick)

- ½ teaspoon onion powder
- ½ teaspoon paprika
- ¼ cup all-purpose flour (for dredging)
- Cooking Essentials:
- 2 tablespoons olive oil or butter
- Gravy:
- 1 medium onion, thinly sliced
- 1 cup mushrooms, sliced (optional)
- 2 cloves garlic, minced
- 1 cup chicken broth
- ½ cup heavy cream or whole milk
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening, if needed)

Instructions
- Prepare the Pork Chops
- Pat pork chops dry with a paper towel.
- Season both sides with salt, black pepper, garlic powder, onion powder, and paprika.
- Lightly dredge in flour, shaking off excess.
- Sear the Pork Chops
- Heat olive oil or butter in a large skillet over medium-high heat.
- Sear pork chops for 3-4 minutes per side until golden brown.
- Remove and set aside.
- Sauté Onions and Mushrooms
- In the same skillet, add sliced onions and mushrooms.
- Cook over medium heat for 4-5 minutes until softened.
- Stir in minced garlic and cook for 30 seconds.
- Make the Gravy
- Pour in chicken broth, scraping up browned bits from the pan.
- Stir in heavy cream, Worcestershire sauce, and Dijon mustard.
- Simmer for 2-3 minutes.
- Thicken the Gravy (If Needed)
- If gravy is too thin, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the sauce.
- Simmer for 1-2 minutes until thickened.
- Smother the Pork Chops
- Return pork chops to the skillet and spoon gravy over them.
- Cover and let simmer for 10-15 minutes until pork reaches an internal temperature of 145°F.
- Serve & Enjoy
- Garnish with chopped parsley.
- Serve with mashed potatoes, rice, or roasted vegetables.
