  • 1 lb ground beef (80/20 for best flavor)
  • 4 burger buns
  • 4 slices cheddar or American cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon butter (for toasting buns)
  • 1 tablespoon vegetable oil (for cooking)

For the Baconnaise Sauce:

  • ½ cup mayonnaise
  • ¼ cup cooked bacon, finely chopped
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 teaspoon lemon juice

Optional Toppings:

  • Sliced pickles
  • Lettuce
  • Sliced red onion
  • Tomato slices

Instructions

Step 1: Prepare the Baconnaise Sauce

  1. In a small bowl, mix the mayonnaise, finely chopped bacon, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, black pepper, and lemon juice.
  2. Stir until well combined. Cover and refrigerate until ready to use to let the flavors meld.

Step 2: Toast the Buns

  1. Heat a skillet or griddle over medium heat.
  2. Spread a small amount of butter on the cut sides of each burger bun.
  3. Toast the buns for 1-2 minutes until golden brown. Remove and set aside.

Step 3: Form and Smash the Patties

  1. Divide the ground beef into four equal portions, about 4 oz each. Roll each portion into a loose ball.
  2. Heat a large cast-iron skillet or griddle over high heat and add vegetable oil.
  3. Place a beef ball onto the hot surface and immediately smash it down using a spatula or burger press. Flatten to about ¼-inch thick.
  4. Season with salt and black pepper. Cook for 1-2 minutes until crispy and browned.

Step 4: Flip and Melt the Cheese

  1. Flip each patty and place a slice of cheese on top.
  2. Cook for another 1-2 minutes until the cheese melts and the burger is cooked through.
  3. Remove from the heat and let rest for a minute.

Step 5: Assemble the Burgers

  1. Spread a generous amount of baconnaise sauce on the bottom bun.
  2. Place the smash burger patty on top. Add optional toppings like pickles, lettuce, onion, or tomato.
  3. Add the top bun and press gently.

Step 6: Serve and Enjoy

Serve immediately while hot, with fries or a side of your choice.
