For the Smash Burgers:
- 1 lb ground beef (80/20 for best flavor)
- 4 burger buns
- 4 slices cheddar or American cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon butter (for toasting buns)
- 1 tablespoon vegetable oil (for cooking)
For the Baconnaise Sauce:
- ½ cup mayonnaise
- ¼ cup cooked bacon, finely chopped
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 teaspoon lemon juice

Instructions
Step 1: Prepare the Baconnaise Sauce
- In a small bowl, mix the mayonnaise, finely chopped bacon, Dijon mustard, Worcestershire sauce, smoked paprika, garlic powder, black pepper, and lemon juice.
- Stir until well combined. Cover and refrigerate until ready to use to let the flavors meld.
Step 2: Toast the Buns
- Heat a skillet or griddle over medium heat.
- Spread a small amount of butter on the cut sides of each burger bun.
- Toast the buns for 1-2 minutes until golden brown. Remove and set aside.
Step 3: Form and Smash the Patties
- Divide the ground beef into four equal portions, about 4 oz each. Roll each portion into a loose ball.
- Heat a large cast-iron skillet or griddle over high heat and add vegetable oil.
- Place a beef ball onto the hot surface and immediately smash it down using a spatula or burger press. Flatten to about ¼-inch thick.
- Season with salt and black pepper. Cook for 1-2 minutes until crispy and browned.
Step 4: Flip and Melt the Cheese
- Flip each patty and place a slice of cheese on top.
- Cook for another 1-2 minutes until the cheese melts and the burger is cooked through.
- Remove from the heat and let rest for a minute.
Step 5: Assemble the Burgers
- Spread a generous amount of baconnaise sauce on the bottom bun.
- Place the smash burger patty on top. Add optional toppings like pickles, lettuce, onion, or tomato.
- Add the top bun and press gently.
Step 6: Serve and Enjoy
Serve immediately while hot, with fries or a side of your choice.
