- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup crumbled feta cheese
- 2 eggs, lightly beaten
- 2 green onions, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon baking powder
- Olive oil, for frying
Instructions
Step 1: Prepare the Zucchini
- Grate the zucchinis and place them in a colander.
- Sprinkle with salt and let sit for 10 minutes to release excess moisture.
- Squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth.
Step 2: Make the Batter
- In a large bowl, combine the grated zucchini, flour, Parmesan, feta cheese, eggs, green onions, parsley, oregano, black pepper, garlic powder, and baking powder.
- Mix until well combined. The batter should be thick but slightly wet.
Step 3: Fry the Fritters
- Heat a few tablespoons of olive oil in a skillet over medium heat.
- Scoop about 2 tablespoons of the mixture per fritter and gently flatten with a spatula.
- Cook for 3–4 minutes on each side until golden brown and crispy.
- Remove and place on a paper towel-lined plate to absorb excess oil.
Step 4: Serve
- Serve warm with tzatziki, yogurt dip, or a squeeze of lemon juice.
Notes
- Refrigerate: Store in an airtight container for up to 3 days.
- Freeze: Lay in a single layer on a baking sheet, freeze until solid, then transfer to a freezer bag for up to 2 months.
- Reheat: Warm in a skillet over medium heat or bake at 350°F (175°C) for 10 minutes.
