- 1 tbsp butter or olive oil
- 1 (14-ounce) package kielbasa, sliced into rounds
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and diced (Yukon Gold or Russet)
- 4 cups chicken broth
- 1 cup milk or heavy cream
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 1 cup shredded cheddar cheese (optional)
- 1/2 cup sour cream (optional)
- Chopped fresh parsley or green onions for garnish
Instructions
- Sauté the Kielbasa & Aromatics: Heat butter or olive oil in a large pot over medium heat. Add sliced kielbasa and cook until browned (3-4 minutes). Remove and set aside. Sauté diced onion until soft (2 minutes), then add minced garlic and cook for 30 seconds.
- Cook the Potatoes: Add diced potatoes, chicken broth, thyme, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10-15 minutes until potatoes are tender.
- Blend for Thickness (Optional): Blend part of the soup with an immersion blender, or mash 1 cup of potatoes and stir back in for a creamier texture.
- Add Dairy & Kielbasa: Stir in milk or heavy cream, then return the kielbasa to the pot. Simmer for 5 minutes. Stir in cheese if using.
- Finish & Serve: Remove from heat, stir in sour cream if desired, and garnish with parsley or green onions. Serve hot with crusty bread.
