- Place chicken breasts into the pot with the vegetables. Cook for about 5 minutes per side until lightly browned. The chicken does not need to be fully cooked at this stage.
- Pour in chicken broth, ensuring the chicken is submerged. Add dried thyme and bay leaf. Bring the mixture to a boil, then reduce heat to low and let it simmer for 20 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it into bite-sized pieces using two forks.
- Return the shredded chicken to the pot. Add egg noodles and cook according to package instructions until tender, usually about 6-8 minutes.
- Stir in heavy cream and season the soup with salt and pepper to taste.
- Remove the bay leaf before serving. Garnish with fresh parsley and serve hot.
