Instructions

  3. Place chicken breasts into the pot with the vegetables. Cook for about 5 minutes per side until lightly browned. The chicken does not need to be fully cooked at this stage.
  4. Pour in chicken broth, ensuring the chicken is submerged. Add dried thyme and bay leaf. Bring the mixture to a boil, then reduce heat to low and let it simmer for 20 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the pot and shred it into bite-sized pieces using two forks.
  6. Return the shredded chicken to the pot. Add egg noodles and cook according to package instructions until tender, usually about 6-8 minutes.
  7. Stir in heavy cream and season the soup with salt and pepper to taste.
  8. Remove the bay leaf before serving. Garnish with fresh parsley and serve hot.
