  • 8 lasagna noodles, broken into pieces
  • 1 lb ground Italian sausage (or ground chicken/turkey)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 jar (15 oz) Alfredo sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Fresh parsley, for garnish

Instructions

  • Cook the Noodles: Boil salted water and cook the lasagna noodles until al dente. Drain and set aside.
  • Brown the Meat: In a large pot, cook the Italian sausage over medium heat, breaking it apart. Drain excess grease if needed.
  • Sauté the Aromatics: Add diced onion and garlic, cooking until fragrant (2-3 minutes).
  • Make the Roux: Push meat to one side, melt butter, and stir in flour. Cook for 1 minute.
  • Add Liquids: Gradually whisk in chicken broth, followed by heavy cream, milk, and Alfredo sauce. Stir well.
  • Season & Simmer: Add Italian seasoning, salt, black pepper, and red pepper flakes. Simmer for 5-7 minutes.
  • Stir in Cheese: Slowly add Parmesan and mozzarella, stirring until melted.
  • Combine Noodles: Add cooked lasagna noodles, heating for 2-3 minutes.
  • Serve: Ladle into bowls, garnish with parsley, and enjoy!

Notes

  • Make Ahead: Store separately cooked noodles to prevent them from getting too soft.
  • Slow Cooker Option: Brown the meat and onions first, then add everything except dairy and noodles to a slow cooker. Cook on low for 4-6 hours, then stir in the cheese, milk, and cooked noodles at the end.
  • Thicker Soup? Let it simmer longer or add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).
