- 8 lasagna noodles, broken into pieces
- 1 lb ground Italian sausage (or ground chicken/turkey)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 jar (15 oz) Alfredo sauce
- 1 teaspoon Italian seasoning
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Fresh parsley, for garnish
Instructions
- Cook the Noodles: Boil salted water and cook the lasagna noodles until al dente. Drain and set aside.
- Brown the Meat: In a large pot, cook the Italian sausage over medium heat, breaking it apart. Drain excess grease if needed.
- Sauté the Aromatics: Add diced onion and garlic, cooking until fragrant (2-3 minutes).
- Make the Roux: Push meat to one side, melt butter, and stir in flour. Cook for 1 minute.
- Add Liquids: Gradually whisk in chicken broth, followed by heavy cream, milk, and Alfredo sauce. Stir well.
- Season & Simmer: Add Italian seasoning, salt, black pepper, and red pepper flakes. Simmer for 5-7 minutes.
- Stir in Cheese: Slowly add Parmesan and mozzarella, stirring until melted.
- Combine Noodles: Add cooked lasagna noodles, heating for 2-3 minutes.
- Serve: Ladle into bowls, garnish with parsley, and enjoy!
Notes
- Make Ahead: Store separately cooked noodles to prevent them from getting too soft.
- Slow Cooker Option: Brown the meat and onions first, then add everything except dairy and noodles to a slow cooker. Cook on low for 4-6 hours, then stir in the cheese, milk, and cooked noodles at the end.
- Thicker Soup? Let it simmer longer or add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).
- Lighter Version: Use half-and-half instead of heavy cream and lean ground meat
